There is no better accompaniment for your fresh fish than Dill.
When using Dill remove the stalky ends and cut the herb finely. A fragile herb, it does need to be handled with care as it bruises easily. Keep it in an air-tight container in the fridge. Dill does need to be used more quickly than other herbs, but that’s not a problem because it can be added to and transform a wide array of dishes. Dill can be added to dressings, yogurt, vegetable dishes and is always a favourite when accompanying fresh fish.
